Acorn squash is packed with fiber, magnesium, potassium, B vitamins and vitamin C. Aside from that, the flavor is a delicious union of sweet and savory – perfect for a comforting fall meal.
Ingredients
1 Tbsp olive oil
1 Tbsp firmly packed light brown sugar
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 large acorn squash, halved and seeded
Preparation
1. Preheat oven to 425 F.
2. In a small bowl, combine all ingredients except squash.
3. In 2-quart shallow baking dish, arrange squash, cut side up. Even brush cut side with spice mixture. Bake 30 minutes or until squash is very tender.
4. Cut each squash half into 2 pieces, to total 4 equal servings.
