In this easy recipe, kale is sautéed with garlic and a touch of red wine vinegar to make a beautiful and delicious side dish.
Ingredients
1 tablespoon extra-virgin olive oil
1-1 ½ pounds kale, ribs removed, coarsely chopped
½ cup reduced sodium chicken or vegetable broth
2 cloves garlic, minced
¼ teaspoon crushed red pepper
2-3 teaspoons sherry vinegar, or red-wine vinegar
1/4 teaspoon salt
Preparation
1. Heat 1 tablespoon oil in a pan over medium heat.
2. Cook garlic and crushed red pepper until fragrant.
3. Add kale and cook, tossing with tongs, until bright green, about 1 minute.
4. Add broth, reduce heat to medium-low, cover and cook, stirring occasionally,
until the kale is tender, 12 to 15 minutes. Remove from the heat.
5. Stir in vinegar to taste and salt.
