Guacamole is made from ripe avocados which are loaded with heart-heathy, cholesterol-lowering fats. Enjoy this guacomole as a delicious dip with cut-up vegetables or baked whole grain tortilla chips for your Cinco de Mayo celebration. Use leftovers as a spread for you lunchtime sandwich!
Ingredients
1 ripe avocado, peeled and quartered
1 tablespoon fresh lime or lemon juice
1 tablespoon finely chopped red onion
1 tablespoon reduced fat plain yogurt
2 cloves garlic, minced
1/8 teaspoon Tabasco sauce, or to taste
Salt and freshly ground pepper to taste
Preparation
1. Process all the ingredients in a food processor (or blender) until the mixture is smooth and creamy (For a more chunky guacamole, use a potato masher or fork).
2. Refrigerate in a covered container for at least 1 hour before serving. Serve chilled or at room temperature. The guacamole will keep for up to 2 days in a covered container in the refrigerator.
