Asian Chicken Salad |

Try this delicious salad, with an Asian flare, for your next weeknight dinner or to bring to work for a tasty lunch. This beautiful salad, full of flavor, will fill you up leaving you feeling nothing less than satisfied.
Ingredients
Salad:
1 large carrot, peeled
3 cups shredded napa cabbage, from 1 small cabbage
3 cups shredded romaine lettuce, from 1 small lettuce
1 small red bell pepper, seeded and deveined, thinly sliced
1/2 cup cherry tomatoes, sliced
2 tablespoons fresh mint leaves, chopped
2 cups thinly sliced store-bought rotisserie chicken (about 2 small chicken breasts)
1/2 cup slivered almonds, toasted*
1 tablespoon toasted white or black sesame seeds*
Dressing:
2 tablespoons canola or vegetable oil
2 tablespoons sesame oil
2 tablespoons low-sodium soy sauce
2 tablespoons seasoned rice vinegar
1/4 teaspoon granulated sugar
Kosher salt and freshly ground black pepper, optional
Preparation
1. For the salad: Using a vegetable peeler, shave the carrot and add to a large salad bowl. Stir in the cabbage, lettuce, pepper, tomatoes, mint, chicken, almonds, and sesame seeds.
2. For the dressing: In a small bowl, whisk together the oil, soy sauce, vinegar, and sugar until smooth. Season with salt and pepper, to taste, if using.
3. Pour the dressing over the salad and toss well
4. *To toast the sliced almonds, heat a small saute pan over medium heat. Pour the almonds into the pan and spread across the pan in an even layer. Stir or shake the pan very frequently (about once every 30 seconds) to prevent the nuts from burning. Just before the almonds begin to develop browned edges and a fragrant smell, remove them from the pan, pouring them immediately into another dish to cool. The almonds should take between 3 and 5 minutes to toast on the stove top.
