This mayonnaise-free slaw is a great side dish for any summer BBQ. The cranberries and apples lend to a delicious sweet/sour combination while the walnuts provide a satisfying crunch (and not to mention, are loaded with heart healthy omega 3 fatty acids)
Ingredients
Slaw
5 cups shredded red cabbage
½ cup dried cherries or cranberries
2 large Granny Smith apples, thinly sliced
1/3 cup chopped walnuts, toasted
Dressing
1/4 cup apple cider vinegar
1 Tbsp. sugar
1 tsp. Dijon mustard
3 Tbsp. olive oil
Preparation
1. Combine the red cabbage and cherries or cranberries in a large bowl.
2. Combine the dressing ingredients and add to the red cabbage mixture and toss well. Cover and refrigerate for 1 hour.
3. Add in the apples and walnuts. Toss again, and serve immediately.
